Caramelized Peaches with Crunchy Cinnamon Oats & Vanilla Ice Cream πŸ‘

Ingredients

For the peaches

* 3 ripe peaches, halved and pitted

* 2 tablespoons butter

* 3 tablespoons brown sugar

* 2 tsp vanilla extract (I measure with my heart)

For the crunchy oats

* Β½ cup old-fashioned rolled oats

* 2 tablespoons butter

* 2 tablespoons brown sugar

* Β½ teaspoon cinnamon

* Pinch of salt

For serving

* Vanilla ice cream

Instructions

1. In a large skillet over medium heat, melt 2 tablespoons butter with the brown sugar and vanilla. Stir until the sugar dissolves and the mixture begins to bubble.

2. Place the peach halves cut-side down in the skillet. Cover & cook for 5-6 minutes, until soft and caramelized. Remove from the skillet and set aside. (I retain a bit of caramel from the skillet to top peaches with when plating.)

3. In the same skillet, melt 2 tablespoons butter. Add the oats, brown sugar, cinnamon, and salt.

4. Cook for 4–5 minutes, stirring frequently. The oats should become lightly toasted and coated in the buttery sugar mixture. Continue stirring so they stay loose rather than clumping together. They will look slightly glossy and gooey while hot.

5. Remove from heat and spread the oats onto a plate or parchment-lined tray. As they cool, they’ll become crispy.

6. Top peaches with a scoop of vanilla ice cream, and sprinkle generously with the crunchy cinnamon oats.
